Artisanal Bread Rolls

Chicken Curry with Cauliflower and Sweet Potatoes

This past weekend I made my family this wonderful chicken curry dish. It was very delicious and fairly easy to put together. This recipe makes a LOT. In fact, while making it I had to use two big cast-iron skillets to fit all the ingredients. It makes good leftovers though, and it can be frozen for later use. To make this recipe paleo friendly I used cauliflower rice, but regular wild rice or white rice would work as well. (Just be sure to cook it separately before adding it to the chicken and sweet potatoes.)

Chicken Pot Pie Soup

Although many people consider apple pie to be the traditional American pie, pot pie has actually been around a lot longer! Pot pie was an easy way to make a whole meal out of only a few ingredients. After having my first chicken pot pie a few years ago, I was hooked. Either in the pie shell, or scooped into a bread bowl, I like it both ways! I especially like the following recipe, I can make it up in the morning and do not have to worry about supper for the rest of the day!

Buckeye Balls!

 

This is the first time I have made buckeye balls and, even though they might not have turned out exactly how I had wished, the taste is amazing and they are very addicting. Definitely a repeat recipe in this household! I researched several recipes on healthy buckeye balls and found lots, but nothing that really suit me. The recipe I have below is a bit of an experiment derived from another recipe for peanut butter fudge. Lets just say, it was a GOOD experiment (a little sticky) and delicious!  🙂
