Pumpkin Soufflé

One of my favorite fall recipes (besides pumpkin pie) is pumpkin soufflé. And with pumpkin season just around the corner, I figured I had better remind myself how good these little desserts are!


1 cup of pumpkin

3 eggs, separated

1/4 cup of maple syrup

1 teaspoon of vanilla extract

1 1/2 teaspoons of cinnamon

1/4 teaspoon of ginger

1/4 teaspoon of cloves



Preheat oven to 350 degrees F. In a blender combine the egg yolks and all of the other ingredients. Blend until thoroughly mixed. In a separate dish beat the egg whites until they form stiff peaks. Pour the egg yolk and pumpkin mixture unto the egg whites. Gently incorporate. Distribute between 3 buttered ramekins. Bake for 20 minutes.

Serve warm!
