Molten Lava Cakes

So this week I decided to make special treat: Molten Lava Cakes. They are to die for, delicious! Now I know this is dangerous, but I am going to share the recipe because I am that kind. Here it is:

Ingredients:

1/4 of a 10 oz. bag of chocolate chips

3 tablespoons of coconut oil

2 eggs

2 tablespoons of honey

1/2 teaspoon of vanilla extract

pinch of salt

1/2 tablespoon of coconut flour

1 tablespoon of cocoa powder

Instructions:

Preheat the oven to 375 degrees F. Prepare 4 ramekins with butter and sprinkle cocoa powder in them. Melt the chocolate chips and coconut oil over the stove. Be sure to stir the mixture so that it doesn’t burn. In a separate bowl mix the eggs, honey, vanilla, and salt. Blend for 3-4 minutes until frothy. Gently stir in the melted chocolate. Sift the coconut flour and cocoa powder into the bowl and fold all the ingredients together. Pour the batter equally into the ramekins. Place on a baking sheet and put in the oven. Bake for 10-12 minutes. The center should look gooey. Best served warm.

You can just eat them out of the ramekins, I like to take mine out and put it on a plate. I also love to have mine with ice cream and occasionally with raspberries!

I also had a surprise this week: 1 dozen eggs from the chickens in 1 day! That’s a record! In my five years of keeping chickens I can not once remember a time that I got 1 dozen eggs in one day! Now that’s reason enough for me to celebrate! Have a great weekend and don’t forget to try those lava cakes!
