Be Thankful

Let the holiday cheer begin! We have had lots to be thankful for over the past few days (and every day!). With Thanksgiving haven taken place on Thursday it wouldn’t be right for me not to include a recipe (and maybe a few photos of what I had on Thanksgiving). Here is one of my favorite holiday recipes:

Sausage Stuffed Mushrooms

Ingredients:

20 portabella mushrooms

1 package of organic pork sausage

1 onion, thinly chopped

1/2 red bell pepper, thinly chopped

2 cloves of garlic, minced

1/2 and 1/3 cup of cup of tapioca flour

2 tablespoons of freshly minced parsley (optional)

2 tablespoons of melted coconut oil

butter, bacon fat, or coconut oil for cooking in

salt and ground black pepper

Instructions:

Preheat oven to 325 degrees F. Wash the mushrooms and remove the stems. Put them in a dish and toss them with the melted coconut oil. Put the cooking oil of your choice in a frying pan over medium heat. Chop the sausage into small pieces and place in the pan. Fry for 8-10 minutes. Add the onion, red bell pepper, and garlic. Cook for 5 minutes. Add the tapioca flour and cook for another 5 minutes. Take it off the heat and add the parsley and salt and pepper to taste. Line a pan with parchment paper and place the mushroom caps in the pan. Fill each cap with a generous amount of sausage mixture. Bake for 40 minutes until the stuffing is lightly browned. Serve warm.

This week I was very thankful for good, healthy food, and some time to spend with my family. We had lots of fun decorating for Christmas this week (its tradition to set up for Christmas on the Friday after Thanksgiving).

  1. Maybe we could have the sausage stuffed mushrooms at Christmas. Are you up to making a bunch?? I’m feeling the Christmas spirit all the way over here!
